Yeast that has been inactivated and is high in sterols and long-chain fatty acids. It helps preserve yeast membrane integrity and thus prevents and corrects fermentation abnormalities when used in the middle of the fermentation phase. When a fermentation becomes stuck, adding it to the mix will help it restart without the need for another yeast inoculation.
